HOW TO MAKE IT

Put the leaves of mint in a highball glass and crush gently with a bar spoon. Add the rum, lime, sugar syrup and fill the glass halfway with crushed ice.

Use a swizzlestick to mix the whole firm. Fill the glass with crushed ice and mix again. Add one last scoop of ice and garnish with a mint sprig, fine straw and cocktail bitters.
